Chicha Morada from Peru Experts in “chicha morada” preparation say that the purple maize has to be boiled in a big pot, along with apple skin, pineapple, cinnamon, clove etc. Others say it is vital to include lemon, and others even claim that it is necessary to add some quince. Whatever recipe is chosen, it is clear that it would certainly result into something that will be highly appreciated in foreign markets, as long as the flavor of the purple maize is maintained. Unlike other chichas, "chicha morada" is not fermented.

The United States is one of the countries with higher potential for “chicha morada” demand. The ever growing Latino community and particularly the number of Peruvians residing there (nearly 1.1 million), constitutes a natural market. And if we take into account the market segment of those interested in ethnical products, the number of potential consumers rises even more.


Chicha powderIn New York and New Jersey alone there are more than 70 Peruvian restaurants which explain why the ports of New York (50%) and Newark (18%) have the highest record of “chicha morada” admissions. Peruvians residing in these northeastern states usually have a higher demand for “nostalgia” products such as the chichi, than in the rest of the country.

That is explained mainly because of the proximity that Peru has with places like Miami, which is a hub with higher transit. As a matter of fact, Peruvians living in Florida usually travel more frequently to Peru and thus, they do not feel that urge to consume nostalgia products. This is why only 7% of the imported Peruvian product arrives at the Port of Everglades.

In addition to the liquid chicha morada (8%), Peru also exports purple maize in its natural form (85%) and as a powder for preparation (7%).

Chicha powderDespite these proportions export numbers are still small but we should keep in mind that its natural market is growing. Moreover, now that Peru is being recognized as a gastronomic power, it awakes the desire to try not only the Peruvian flavor, but also its natural ingredients.

Chicha morada has been prepared and consumed in communities throughout in the Andes for millennia. The Inca used chicha for ritual purposes and consumed it in vast quantities during religious festivals.

Legal? Why wouldn't it be?  It's perfectly legal.

I found 'instant' mix for this in a number of places in Boston and New York.  Of course it's much better when you make it from scratch and not some instant mix.
