In my personal opinion, Carlos del Saz prepares the best paella I´ve tried in Lima. This is due to several factors that make all of his paella´s so special which involve both the food and the person.
As a Cheff, he is a very amusing person who really makes you enjoy both the process and the result. Along with his staff, he provides you with first class attention before, during and after the meal. About the food itself, it´s not just the fact that the variety of paella´s fulfill every expectation, but also the various entrée´s that create the perfect company before the main course.
I won´t hesitate about recommending Carlos´s service and I assure you satisfaction is guaranteed.
