Pisco of the Month - Chacra Maestra

Chacra Maestra first came out with a traditional quebranta Pisco and along the way it added into its family of Piscos the Acholado, Italia and finally the Torontel varieties, thus rounding out the 4 varieties offered today. Chacra Maestra is a Pisco for tasting. Its very smooth and suggestive flavor is ideal for tasting it all on its own. The grapes are strictly selected and organically cared for all way from the vines and throughout their entire development, avoiding all chemical products. Once the harvest arrives, the gathering of the must takes place and the production process begins.

Chacra Maestra was intially created to satify the corporate sector, thus a a uniquely Peruvian value added line was developed that included special presentations with very peruvian accessories. This, along with the quality of of our pisco, allows us to offer our products to the top companies in Lima.

Our “bodegas” are in the Aquijes district in the Ica Valley – renowned production area and recognized as the best area for the development of a great grape. This is where all of our infrastructure is located, such as the presses, the fermenting vats and the still with which Chacra Maestra is made in accordance with the NTP (Norma Técnica Peruana).

The proction process consists of the harvest, the pressing to extract the must, then the gravity draining into the fermentation vats where the controlled fermentation takes place. Thereafter, it is drained into the the still where the distillation takes place. During this process we are able to get a Pisco with about 42-44 degrees of alcohol. This Pisco is then allowed to settle for about 4 months and then it is bottled very carefully and with the utmost cleanliness.

Our valley produces wonderful grapes that keep getting better and better, however, we consider our Toronteland our Quebranta our star products.

For the most part, our distribution is through different companies for them to offer as gifts to their top clients as well as for special events and holidays. However, if anyone wishes to try our Pisco, they can do so at the bar of the well known restaurant Astrid y Gaston in Miraflores, otherwise, you may contact us and we would be happy to offer you any of our 4 varieties.
