Pisco of the Month - "1615" de gran terruño

Our 1615 de gran terruño Pisco takes its name from the year 1615.  That was the first time historical records appeared indicating the existence of grapes in Peru and their adaptation to the climate and soil of Pisco, as well as their local distillation for the production of the first Piscos.  This according to Felipe Guamán Poma de Ayala, in his work “Nueva Crónica y Buen Gobierno” completed in the same year.

Bodega San Nicolás, producer of”1615” pisco, uses its own vineyards to get its musts or grape juices. Our vineyards have their own history as they are located on the same ancient hacienda belonging to the Jesuits who were in charge of the bodegas and where the first piscos were distilled in the XVII’s century.  Today the bodega is in the La Pampa de Lancha-PISCO region, which was once part of the hacienda’s ancestral lands. The photographs that appear on the labels represent the fields, the still and the bodega of this ancient Jesuit hacienda.

Our piscos are distilled from fresh, recently fermented wine, made from our best quebranta grapes. No other ingredients are added as the grapes have high sugar content and sufficient natural yeast. The pisco is not corrected in any way; it comes out of the still with a 42º alcohol content which is achieved through the distillation process. The product comes out clean so no clarification is required. And after the settling period, it is sent off to market.

The San Nicolás wineries adhere to agricultural best practices, which guarantee top quality grapes and the Bodega meets the highest quality control standards.  As a result, we obtain an exquisite 100% grape pisco.
In recognition of this arduous work, both in the field as well as in the bodega, in 2006- 2007 our pisco was awarded a gold medal in Brussels, a gold medal in Ica region, a silver medal in the Nacional Pisco Contest and a silver medal in at the Expovino- Pisco.

Our grapes are processed and distilled at CITEvid (Centro de Innovación Tecnológica Vitivinícola) in Ica.  Thus we can say that technology is not just at the service of the producer, but also the consumer. This is because CITEvid is in charge of accrediting laboratory testing that verifies the Technical Standards for pisco as well as ISO 17025 certifications. These tests guarantee the quality of the pisco for both the consumer and the producer. 
Currently we are working on a project to build our own processing and distilling facilities.
Bodega San Nicolas, currently offers the Quebranta, Italia, Torontel and Albilla varieties of Pisco and we sell a “1615”  Quebranta in a 750 ml. presentation and a “1615” Mosto Verde in a  500 ml. presentation.  However, we consider our 2005 Quebranta to be our star product, having been awarded the 4 afore mentioned medals. Soon we will be coming out with an Acholado, an Italia in its Pure y Mosto Verde varieties and a “1615” Quebranta Selección Premiada Pisco.
