We continue building up our future glossary section. Aguardiente: (Firewater) The result of fermentation of fermented or ripe biological substances
Cabeza: Spirit that flows at the onset of the distillation of musts or wines. This portion is NOT used in any quality pisco.
Cepa: Grape or plant variety
Chicharron: Popular expression or term used to indicate the pisco that has just come out of the still.
Cola: Spirit that flows at the end of the distillation process which is usually thrown out due to its unpleasant odor and flavor. This portion is NOT used in any quality pisco.
Corazón: The center portion of the “Chicharron” (see above), after separating out the “Cabeza” (see above) and the “Cola” (see above).
Corporar: Terms used by pisco producers referring to the incorporation of aromas and flavors from different batches of grapes or piscos.
Ensamblar: the process of blending different piscos to make an Acholado pisco. This is a very delicate process since the producer must mix just the right types and proportions to get a perfect Acholado.
Fermantación: The process of transforming sugar into alcohol.
Monovariedades: This refers to Piscos made from one single variety of grapes.
Quema: The process of applying fire to the grape must in order to extract the alcohol by way of evaporation.
Trasegar: The step of moving the wine or must from one container to another.
