Villa de Valverde pisco is a refined distillate with a limited production of 2000 bottles. It is produced at the old Quilloay estates, this Quechua name makes reference to a full moon which rains down on the crops in that part of the Ica valley. Its production was taken over by the Sotelo Bodega, one of the most traditional and award winning bodegas in Ica, with several regional and national awards that bear witness to the quality care and passion which allow it to produce exceptional piscos.
In both varieties, Puro Quebranta and Acholado, special attention was paid to maintaining the tradition of a great pisco; maintaining its warmth and persistence; and then blending it with the kindness and harmony demanded by today’s palates.
The name Villa de Valverde comes from the original name, given by Don Luis Jerónimo Cabrera in 1563 to this valley which today is known as Ica. This was where the first vines brought over from the Canary Islands were planted, the same ones, that due to the exceptional conditions of the lands of Ica, were transformed into the pisco grapes we know today.
Villa Valverde offers two varieties of Pisco, Quebranta and Acholado. The producer is particularly proud of the Acholado variety, an exceptional blend which has perfectly brought together the splendid harvest of the Quebranta, Torontel and Moscatel grapes of 2007 and 2008.
Villa Valeverde’s producer has brought the latest technology to each stage of the production process while still respecting the traditional culture around the pisco product
ion process and thus resulting in a Pisco which is the fruit of the great customs of our ancestors. It is interesting to see the synergy of the ancestral still and the modern energy saving stainless steel systems at work.
The pisco is made from grapes harvested once they have reached a Beume degree of 13. They are then transported in 20 Kg plastic crates, ground and the impurities are removed. The must is soaked in pumace for 6 hours after which it is drained and pressed. The must then ferments for 15 days in fermentation tanks which control the temperature and density. It is then distilled in a still with 600 liter heaters, but as always discarding the head and tail of the distillation and the body reaching up to 42° of alcohol. After being homogenized it is stored to settle and age at a moderate temperature.
