Cholo Matías pisco is a pisco we distill from the must in an antique still with wood fires, following a tradition that has evolved over several generations.

We make our pisco from the grapes from our own vineyards. Thus we control the entire process from the growth, harvest, to the ripening, making sure we maintain the best agricultural practices. Also, we have the guidance of our father, the oldest living pisco taster in Ica and he insists that the pisco be made to his standards and taste, as it would be for his personal consumption.
