This pisco is very special, from the strict selection of its grapes (7-8 Kg. per liter) to its fermentation and distillation processes, which are under the supervision of 2 Peruvian enologists who studied in Europe as well as my constant personal direction, in which I utilize a bit of the knowledge I gained from my studies in Pisco Tasting at the IDVIP. There is also a year-long settling process that contributes to the refinement of the aroma and the quality of the pisco.
