Huevos Elegantes / Elegant Eggs

Ingredients
6 eggs, hard boiled
hard boiled
3 TBS mayonnaise
1 tsp quality mustard
1 tsp lemon or lime juice
dash of hot sauce (optional)
One of the following condiment options: 1/4 cup finely diced celery
1/4 cup finely diced onions
1/4 cup minced green olives
1/4 cup minced pickles
One of the following spice options: 1/2 to 1 tsp curry powder
chili powder
celery seed

Preparation
Cut each of the hard boiled eggs in half and remove the yolk. Place the yolks in a mixing bowl. To the egg yolks, add the mayonnaise, mustard, lemon juice and hot sauce (if desired). Select and add one of the condiment options and one of the spice options. Blend together well. With the use of a pastry bag, or small spoon, fill the holes in the egg whites with the yolk mixture.
