Ensalada de Garbanzo / Garbanzo Salad

Ingredients
2 C cooked garbanzo beans or 2 (15oz) cans garbanzos beans
drained and rinsed
1 cup thin red onion slices
2 Tbsp minced fresh parsley
Dressing:
½ cup white vinegar
1/4-1/3 c. sugar
1/4 cup oil
1 tsp salt
1 Tbsp prepared mustard

Preparation
Combine beans, red onion and parsley. To make sauce, combine vinegar, sugar, oil, salt and mustard in a small bowl. Wisk together, until blended. Pour sauce over bean mixture and stir together. Marinate in the refrigerator at least 30 minutes hours before serving, stirring occasionally.
