Ensalada de Papa Peruana / Peruvian Potato Salad

Ingredients
  1 kilo regular white potatoes
boiled and cubed (you can leave the peel on)
2 cups cubed queso fresco
1 ½ cups chopped celery
1 ½ cups diced onion
¼ cup Ají molido (pureed Ají amarillo)
1 cup mayonnaise
¼ cup white vinegar
2 Tbsp. mustard
1 ½ tsp. salt to start
Pepper to taste

Preparation
In a large mixing bowl, add the potatoes, cheese, onion and celery. In a separate bowl, blend the rest of the ingredients together. Then pour the sauce over the potato mixture and mix well. Set in the refrigerator for at least 1 hour or until cold.
