Cod Salad

Ingredients

Mixed Lettuce
A handful Fresh Coriander leaves
A handful Fresh basil leaves
4 Medium fresh cod fillet
1 red onion
½ Cucumber
1 small green Mango

Dressing
2 small red chillies
2 cloves garlic
Small piece of ginger
2 tablespoon butter
¾ cup Lemon juice
Salt and pepper to taste

Cook the fish in a pan with a bit of water until it is tender and flaky, do not over cook or it will dry out. Remove from pan, let cool and then break into medium size pieces.
Chop the onion into thin rings. Remove the seeds from the cucumber and julienne. Dice the mango into small cubes.
In a bowl, mix the greens and the julienne cucumber; place the pieces of fish then the onion rings and the mango cubes.
For the dressing; chop the chilli, garlic and ginger, then sauté them with the butter, do not brown. Remove from heat.
Add the lemon juice and season to taste.
Add the dressing to the salad and serve.
Serves 4
