Curry Rojo de Pollo / Red Curry Chicken

Ingredients

2 tablespoons of oil
½ tablespoon of chopped red onion
½ tablesppon of chopped garlic
50 grams of red pasta curry
250 grams of chicken breast, without bones
1 cup of chopped pepper, zucchini and mushrooms
400 mml of coconut milk
1 cup of chicken broth
1 tablespoon of fish sauce
1 tablespoon of sugar
2 Kaffir leaves or lemon leaves (optional)
Fresh Basil

Preparation

1. Cut chicken in small pieces.
2. Heat oil in a pan on high heat.
3. Brown garlic and onion.
4. Add chicken and stir and brown. Set aside.
5. Put red curry contents to fry for aprox 1 minute. Be careful because the oil will splatter
6. Add coconut milk to pan.
7. Add the chicken broth.
8. Wait for it to reduce and for the curry to thicken.
9. Add chicken and vegetable. Turn down heat to medium.
10. Add sugar, fish sauce and kaffir leaves and remove.
11. Serve curry with white rice, without salt and not granulated.
