Papa a la Huancaina

Ingredients
340 gr. of potatos
60 gr. of yellow chili pepper
20 gr. of chopped onions
½ unit of garlic
30 gr. of fresh cheese
80 ml of evaporated milk
0.5 tsp of vegetable oil
1/2 pack of soda crackers
Salt and pepper
Garnish
Hard boiled eggs
Olives
Preparation
Sautée onions and garlic, then add the yellow chili pepper. Mix the milk, cheese, crackers, salt, and pepper in a blender. Then add the onions, garlic and yellow chili pepper. Blend all the ingredients until you obtain a creamy sauce.
Cook potato in hot water aprox. 20 minutes. Peal the potatoes and cut in slices, then reserve until they arecold.
For presentation:
Slices of boiled potato topped with the chili creamy sauce, garnished with slice of hard boiled egg and black olives.
