Pork Adobo

Ingredients

1 unid Bay leaf
2 lb. Boneless pork loin
10 gr panka aji or New Mexico chili
1 gr ground cumin
5 ml red wine vinegar
100 gr. Chopped white onion
4 cloves garlic
5 ml vegetable oil
Salt and pepper to your taste
¼ lt chicha de jora (you can find it in latin markets or you can use dark beer)
1 tea spoon dry oregano

Preparation

Mix all the ingredients, except the pork, in a bowl and then marinated the pork loin with the sauce for 24 hours.
Then take the pork out and scrub the most of the marinated and seared in a hot oil, the add the marinated sauce and cooked for about 1 hour in medium low temperature or in the oven cover for 45 minutes at 300*F.
