Aji de Hilaria Jam

Ingredients
200 k. of ají amarillo cleaned
¾ a cup of white
2 cups of white sugar
1 aji cut in fine strips for the finished product
Preparation
Remove al the seeds and veins from the aji. Place in a pot, cover with water and bring to a boil. Change the water and repeat bring to a boil 3 more times, drain and peels the ajis.
Blend the ajies with vinegar. Put this mix in a pot and add sugar. Bring to a boil and cook at, at medium heat, until it become a jam.
Almost at the end, add the aji amarillo, raw, cut into very fine strips. You can use the jam as a dipping sauce, put it on top of cream cheese, camembert cheese or something similar. Served warm with toast.
