Tacu Tacu / Peruvian Rice and Bean Cakes
Ingredients
1 pound of beans white, black or canary
½ pound or 250 grams of bacon diced
½ pound of cooked rice
2 tsp. olive oil
2 cups chopped onion
5 cloves of garlic minced
½ cup of pureed Ají molido (Amarillo)
½ cup bread crumbs
2 tsp Orégano
½ tsp cumin
2 tsp salt
½ tsp pepper
Preparation
Soak beans overnight, rinse. Cover beans with water add bacon and cook until done. Purée 1//3 of the bean mixture in blender or food processor. Cook rice and reserve. Sauté onions and garlic in oil, add spices, salt and pepper. Combine beans, bean puree, rice, and bread crumbs into onion mixture and mix well. If the consistency is too dry you may need to add a little more oil. Make into oblong 2 inch thick patties flattened. Add a little oil to skillet and sauté until golden and crusty.
