Ensalada de Fideos con Cebolla / Pasta Salad with Onions

Ingredients
  1 cup diced onion
1/2 cup chopped scallions
3 cups chopped plum tomatoes
1/2 cup chopped fresh basil
1/2 cup chopped bell pepper
1/2 cup grated parmesan cheese
500 grams short pasta cooked al dente.
Dressing:
2/3 cup extra virgin olive oil
1/3 cup red wine vinegar
1 Tbsp quality mustard
1 tsp. sugar
salt & pepper to taste

Preparation
In a bowl, add the first 7 ingredients. In a separate bowl, combine the dressing ingredients and mix well. Pour over the noodle mixture and blend well. Refrigerate for 30-60 minutes. Stir before serving
