Camote Bread Pudding

Ingredients

250 grs camote bread
1 teaspoon cinammon
¼ teaspoon nutmeg
1 ½ cups cream
1 cup brown sugar
4 eggs

Syrup
¼ cup algarrobina
1 cup orange juice
½ cup sugar
1 small cinammon stick

Preparation

Cut the bread in cubes and leave a couple of days out to harden.
Preheat oven 160ºC
Boil the cream and pour over the bread. Set aside so it can absorb all the cream.
Beat the egg yolks and add the sugar and spices.
Beat the egg whites until firm.
Add the bread to the yolk mixture then fold in the egg whites.
Pour into oven proof bowls and bake until firm, about 20 minutes.

For the syrup. Heat all ingredients in a sauce pan and let boil until it becomes a light syrup.

Serve the bread pudding warm with some algarrobina syrup on the side.
