Ensalada de Fideos con Salsa de Mani / Peruvian Peanut Pasta Salad

Ingredients
  12 oz or 400 grams of pasta cooked
al dente then rinsed and cooled
4-6 cups chopped red and yellow bell peppers
1.5 cups chopped Ají amarillo.

Sauce:
8 cloves of garlic
2 cups firmly packed cilantro leaves
3/4 cup olive oil
1 Tbsp. Ají Panca or chili powder
1 Tbsp. salt
1/2 tsp. pepper
3/4 cup white vinegar
1/4 cup water
2 cups roasted unsalted peanuts

Preparation
In a large bowl, combine the pasta and both peppers. Place all the sauce ingredients in a blender jar. Blend until smooth. Pour over pasta and mix well. Let sit at room temperature for 30 minutes before serving.
