Ingredients
carpaccio sliced sole fillet
lemom juice
cilantro chopped
cream of aji Amarillo (yellow chili)
cream of rocoto (red chili)
chalaca de choclo (cooked corn kernels, red onion, tomatoe, cilantro, lemon juice, salt)
cooked sweet potatoe (sliced)
Preparation
place sliced fish on two separate skewers. Marinade them with salt, lemon juice and cilantro
to plate, place one slice of sweet potatoe in the middle of plate. Place one seasoned fish skewer and pour cream of aji over it
place other fish skewer and pour rocoto sauce over it
place chalaca on each side of the plate
