Salsa Peruana Agri-Dulce / Peruvian Sweet and Sour Sauce

Ingredients

1 cup red bell pepper diced
1 cup onion diced
1 Tbsp. olive oil

1 cocona peeled and stem removed (add ¼ cup water pureed strain and reserve 2/3 cup of juice)

¼ to ½ cup white sugar
¼ cup ketchup
1 tsp. salt
1 tsp. toasted sesame oil
1 Tbsp. corn starch mixed with 1 Tbsp. water


Preparation
In a medium sauce pan, heat oil and sauté the onion and red pepper until soft. Add the cocona juice, sugar, ketchup, salt and sesame oil. Simmer gently for 10 minutes and add corn starch. Stir continually until thickened.
