Tiradito de Lenguado / Flounder in Peruvian Chili-Lime Sauce

Ingredients
1 Kilo or 2.2lbs. fresh white fish filets
sliced in bite-sized pieces.

Sauce ingredients:
Juice of 10 limes
5 cloves of garlic
2 Ají amarillo seeded and veins removed
1 small onion peeled and sliced handful of leaves of celery
salt and pepper.

Preparation
In a blender jar, add all sauce ingredients and blend until smooth. Pour over fish and marinate for 30 minutes in the refrigerator. Stir before serving.
