Ceviche de Champiñones / Mushroom Ceviche

Ingredients
300 grams mushrooms quartered or sliced
3 cloves of garlic finely chopped
1 tsp thyme fresh
½ cup chopped celery
2 Ají amarillos minced
½ cup chopped onion
Juice of 4 limes
¼ cup olive oil
Salt
Pepper

Preparation
Add all ingredients to a bowl and allow 15 minutes to macerate, serve cold.
