Lomo Saltado / Peruvian Stir-Fried Beef

Ingredients
  2 pounds of beef tenderloin or other tender steak
sliced in thin strips
3 cloves of garlic minced
2 medium red Spanish onions
cut into strips
4 tomatoes seeds removed cut into strips
3 Ají amarillo cut into thin strips
2 tablespoon of white vinegar
1 cup finely chopped parsley
plain oil for frying
salt and white pepper
3 tablespoons soy sauce
1 cup Pisco-Mosto Verde
5 white potatoes peeled and cut into strips for deep frying- fry separate until golden brown and crispy
Cooked rice

Preparation
Cut beef into thin strips, Cook garlic in oil over medium heat and add meat. Quickly saute and remove meat, reserving the juice separately. Heat oil in same pan, add onion and Ají strips, and stir-fry until partially soft. Add parsley and vinegar. Then combine the juice from the meat, tomatoes, soy sauce, salt, and pepper. Cook only a few minutes more. At last moment, quickly add the Pisco and Flambé. Serve immediately over rice.
