Duraznos con Chorizo / Sausage and Peach Bake

Ingredients
8 Peaches (national) peeled-pitted sliced
2 red onions sliced
2 red peppers sliced
1 Ají Amarillo seeded and veined minced
1 yellow pepper sliced
1 kilo or 2 lbs chorizo cut into 2 inch lengths
1 tsp. extra virgin olive oil.

Preparation
Preheat oven to 350 degrees. Coat glass baking dish with olive oil, add ingredients and make sure they are mixed. Cover dish and place in oven for 45 minutes to one hour or until chorizo is well down.
