Soltero de Queso / Vegetable Cheese Salad from Arequipa

Ingredients
800g Habas peeled and cooked
½ kilo queso fresco chopped in small cubes
4 tomatoes chopped small
½ cup rocoto minced
1 cup fresh corn kernels cooked
1 red bell pepper chopped small
½ cup black olives chopped small
½ cup chopped scallions
¼ cup minced parsley
½ cup minced cilantro
Dressing:
½ cup extra virgin olive oil
1/3 cup balsamic vinegar
1 Tbsp. cumin
1 tsp. ground pepper
1 tsp. sugar
1 ½ tsp. salt
2 cloves garlic minced

Preparation
In a large bowl, combine habas, cheese, tomatoes, rocoto, corn, bell pepper, olives, scallions, parsley and cilantro. In a separate bowl blend well the dressing ingredients. Pour over salad and mix well. Refrigerate at least 30 minutes. Stir and adjust salt before serving.
