Salsa de Choclo / Corn Salsa

Ingredients
3 cups fresh corn kernels
1/2 cup Ají amarillo chopped
1 cup green peppers chopped
3 cloves garlic minced
½ cup minced scallions
½ cup cilantro chopped
Dressing:
1 tsp. cumin
¼ cup lime juice
1 Tbsp. honey
1 Tbsp. olive oil
Salt and Pepper

Preparation
Combine the first 6 ingredients in a bowl. In a separate, add the dressing ingredients and mix well. Pour over the carrot mixture and blend well. Refrigerate at least 30 minutes before serving.
