Salsa Picante Tropical de Limón con Mariscos / Tropical Spicy Lime Sauce over Scallops and Shrimp

Ingredients
12 Large scallops
12 Large shrimp deveined and peeled
1 tsp butter
1 tsp olive oil
1 cup of fresh cubed golden pineapple
¼ cup rocoto finely minced
Juice of 2 Limes
½ tsp. salt
½ cup of honey
Watercress or Arugula
Fresh Snap peas

Preparation
Sauté scallops and shrimp in butter or olive oil until just tender. In a food processor, add pineapple, rocoto pepper, and lemon juice and puree. Mix in honey and salt.
