Salsa de Culantro y Pecanas / Cilantro Pecan Pesto

Ingredients
2 cups packed fresh cilantro
3-4 large garlic cloves
1 cup pecans (or walnuts) lightly toasted
½ - 1/3 cup extra virgin olive oil
1/3 cup grated parmesan cheese
½ tsp. white pepper
1 tsp. cumin
juice of ½ lime
salt to taste

Preparation
Add all ingredients in a food processor, except the olive oil. As it is blending, slowly add the olive oil and puree until smooth. Toss immediately over hot pasta (about 12 oz or 400 grams). You can garnish with a little more parmesan cheese on top.
