Papa a la Huancaina / Potato Slices with a Mild Spicy Cheese Sauce

Ingredients
  1.5 lbs or 3/4 kilo of white potatoes
boiled until just soft
peel and sliced into 1/3 inch rounds.
Sauce:
1 lb or 1/2 kilo queso fresco
1 cup of milk
¼ cup of vegetable oil (canola)
4 Ají amarillos
veins and seeds removed
1/4 cup of crumbled saltine crackers
2 hard boiled eggs
yolks only
Juice of 2 fresh key limes
½ cup of fresh Huacatay
Salt (start with ¼ teaspoon and adjust because crackers and cheese salt quantity varies)

Preparation
Add all sauce ingredients to food processor and process until smooth. (Should not be too thick. Add a little milk if needed)
