Ensalada Fresca de Espárragos / Fresh Asparagus Salad

Ingredients
1lb. fresh asparagus, cut into 1-inch pieces
½ lb. tomatoes diced
1 cup cubed mozzarella cheese

Dressing:
½ cup balsamic vinegar
¼ cup olive oil
2 Tbsp honey
2 Tbsp quality mustard
2 Tbsp chopped chives
1 tsp curry powder
½ tsp salt
pepper to taste

Preparation
Combine the first three ingredients in a bowl. In a separate bowl, add the dressing ingredients and mix well. Pour over salad and blend well. Refrigerate at least 30 minutes before serving.
