Ensalada de Zanahoria / Carrot Salad

Ingredients
5 cups grated carrots
½ cup raisins
3/4 cup pecans chopped
1 cup chopped tart apple tossed with ¼ cup lime juice.
Dressing:
1 Tbsp mustard
3 Tbsp honey
½ cup mayonnaise or mayonnaise substitute
½ cup plain yogurt
¼ tsp salt

Preparation
Combine the first 5 ingredients in a bowl. In a separate, add the dressing ingredients and mix well. Pour over the carrot mixture and blend well. Refrigerate at least 30 minutes before serving.
