Ají de Gallina / Shredded Chicken in a Creamy Peruvian Chili Sauce (quick version)

Ingredients
6 cups Shredded grilled chicken (from pollo a la brasa)
¼ cup olive oil
1-1/2 cups onions chopped
8 cloves garlic sliced
6 Ají amarillo chopped
3 cups dry baguette bread crumbs
1 ½ teaspoons cumin powder
2 cups milk
¼ cup butter
2 teaspoon Ají Panca
½ to 1 cup chicken stock
1/4 pound of toasted unsalted peanuts
Salt and pepper 1 cup grated parmesan cheese.

Preparation
Heat oil in a large Dutch oven over medium high heat. Saute onions, garlic and Ají amarillo together until softened. Once softened, reduce heat to medium low. In a food processor, place bread crumbs, milk, chicken stock, butter, Ají Panca, cumin powder, peanuts and shredded parmesan cheese. Process until well combined. Add the bread crumb mixture to the Dutch oven. Add the shredded chicken and stir to combine. Allow mixture to simmer together about 15-20 minutes. Add salt and pepper to taste.
