The Peruvian cook Víctor Gutiérrez will prepare a personalized version of ceviche for the “Dinner with Stars,” to be held on Friday in Spain.
Starting last January, cooks based in Castilla y Leon community included in the Michelin Guide meet the last Friday of each month to offer a dinner, and each one of them prepares a dish.
Inspired in his recent visit to Peru, Gutiérrez will create a ceviche with scallops, sea urchins and citric caviar.
“I will not prepare a traditional ceviche because I have not found the appropriate ingredients. I decided to create a personalized version, but using the traditional technique,” said Gutiérrez.
The Peruvian cook remarked that these dinners gather gastronomic critics, local cooks and cuisine lovers, and they all have the chance of enjoy six different cooking styles in one night.
Once the “Dinner with Stars” is over, on June 25, all the participant cooks will write a book including the 36 recipes they used, and of course the scallop ceviche will be there.
