Peru's "Astrid y Gastón" considered as an example in the business

The restaurant chain owned by Peruvian chef Gaston Acurio was considered by the Spanish newspaper El País as “a Latin American multinational firm", which is beginning to spread into other regions such as Europe.

According to the aforementioned newspaper, “Astrid y Gaston” is promoting indigenous agricultural products of the Peruvian cuisine, and is a good example of product innovation of "Latin American firms in the world."

“Astrid y Gaston” has opened locations in Quito, Santiago de Chile, Bogotá, Caracas, Mexico, Madrid and Panama, becoming the ambassador of Peruvian cuisine in the world.

According to the article's author, Lourdes Casanova, this restaurant is a good example for many other Latin American firms.

I don't find his flagship restaurant to be all that great.  I'm all for him taking Peruvian food internationally but the way I see it, his gastronomic empire is more based on marketing than it is on actual tasty food.

You are correct, running a business in Peru requires thinking outside the box especially when you take the business internationally.  You must however prepare yourself for the view points of those that visit your business, good or bad and clearly understand who your target market is.  When I was there, there didn't seam to be many local residents dining at the restaurant, it appeared to be dominated by tourists.  This would appear to be his targeted audience, not just at his flagship restaurant, but in his other establishments as well.  This would be no different than the Hard Rock Cafe's throughout the world, they are targeted to tourists, not local residents.  Tourists will overwhilemingly discuss places they have traveled to and all of the acitivities, restaurants and hotels that they liked and disliked more so than locals will.  In regards to David's comments, I was indifferent about the food, however you cannot solely judge a restaurant on one dish or one visit. I was however very impressed with the service, which was absolutley remarkable!

every restaurant has someone standing outside with a menu in hand. You cannot walk past one of these people without having them approach you and tell you how good their restaurant is and how you really should eat there. There is one street in particular called Procuradures, just off the Plaza de Armas, where as soon as you turn the corner you are accosted by between 4 and 6 Peruvians each trying to convince you (in broken English) to eat at their restaurant. They shove their menus in your face, each fighting with the others to grab your attention and make sure you go to their particular tourist restaurant. They all promise you a free Pisco Sour (the coctail of Peru) and offer you set price menus for about 3 US Dollars that include appetizers, entrees, and a desert. Last night I ended up paying $2.70 for a dinner that included nachos, salad, pizza, a glass of Coke, and two (tiny) glasses of Pisco Sour. It seemed like a great deal, and the food was good, but the portions were small and I was still hungry afterwards. BUT IN CHILE IS DIFFERENT...
This first-rate restaurant is located in the Grand Hyatt Santiago and serves one of the better menus of Thai foods in the city. Many of the city's restaurants stick to traditional regional fare, so a visit here is a great way to savor international cuisine. The menu features meats and vegetables cooked on an open grill or fried, depending on taste. In addition to the set menu, the restaurant offers a full entrée bar as well as an array of dessert options. Be sure to order one of the Chilean wines from the very good wine list.

Please never go to cusco, as a tourist in Cuzco you are constantly being accosted by locals. there are lots of prostitutes in the streets, You sit down on a bench in the park in the center of the city and approximately every 60 seconds someone will come up to you trying to steal something from you. Almost every day in Cuzco I was accosted by some small kid under the age of 10 who would stick out his or her hand and whine, "Propina!" which means "give me a tip" in Spanish. Then there are the native Andean women who walk around Cuzco with their llamas trying to get tourists to get a picture of themselves standing next to a llama. It does make a good picture to show your friends back home, but it´s just so cheesy. that women are dirty, and most of them prostitutes.

To make money I either sell candy on the streets or better yet send my kids to do it while I drink beer at night and sleep all day like a C.D.M.  If I run out of beer money I rob a couple of combi passengers or rent out the kids for the day.

I am Peruvian Ive lived in : USA,  England, And  currently in Canada. I will be returning to my Peru soon. I love Peru and to me its the best country in the World. Peru has:  The most beautiful beaches,  hottest Women, Brillant Nightclubs,  The weather is great, The food is great and the People are always welcoming. Yes Peru has problems but what country in the World does not have problems?
As for USA being so superior or chile being superior dont make me laugh.
I rather live in Peru anyday than live in:  chile,  USA,  Canada or Europe.
But then I know these other countries,  And to me  they dont even come close to my Peru. However I would never live in USA, Canada,   Europe  or chile even if you paid me all the money in the world.

Thats right Cry Baby¡ blame it all on Chile.   It gets really sad hearing Peruvians Cry all the time about the Chilenos!
