Vegan Chocolate Cake from La Gula Gourmet (Recipe)

Her company, La Gula Gourmet, happily bakes up sinfully good treats. Many of us are interested in following a healthy lifestyle, but that doesn’t necessarily mean we have to cut out all of our favorite treats, like chocolate. Have your cake and eat it too with this recipe.

_(for a 26 cm or 12 portion mold)_

150 g. canola oil
200 g. palta fuerte or mashed avocado (replaces the egg)
300 g. panela or brown sugar
100 g. bitter chocolate, melted
50 g. cocoa powder
400 g. cake flour
11 g. baking powder
4 g. bicarbonate
7 g. white vinegar
7 g. ground cinnamon
10 g. vanilla essence
5 g. cloves
2 cups water


300 g. bitter chocolate
200 g. coconut milk
30 g. glucose



Whisk the oil, sugar and avocado, then add the melted chocolate, water and vinegar. Finally, add all the solids. Bake for 60 minutes at 150 degrees celsius.

Ganache preparation

Put the coconut milk, the bitter chocolate and cocoa paste with glucose in the microwave for 1 minute and stir well until melted. Allow to cool and pour over cake. Decorate with red fruits. If you like, you can accompany your cake with a strawberry coulis!
