Foreign tourists may spend more than US $500 million in the thousands of restaurants distributed nationwide, estimates the Peruvian Institute of Gastronomy (IPG).
"Peru’s exquisite cuisine is increasingly recognized worldwide, and many foreigners come here not only to discover its history and archaeology, but also to taste our national dishes," said Andres Ugaz, IPG director.
He mentioned that the most demanded dish among foreigners is the ceviche, that has 55% of their preferences, followed by the lomo saltado with 13%, thus he demanded all restaurants to be extremely careful at handling the food.
“Peruvian gastronomy is a national pride. Let’s grow with it and show it to the world,” he expressed.
