When I first made it, my husband advertised it as an “avocado pudding.” All of his friends raised suspicious eyebrows. But, they all loved it, and are now quick to come over to taste all my new creations. One of them said she was delighted she could eat chocolate pudding and have it count as a vegetable!
Ingredients:
1 cup young coconut meat
1 avocado
1 1/4 cup water
1/2 cup cacao powder
8 large dates, pitted
1 tsp. vanilla extract
Pinch salt
Directions:
Drop the dates in the food processor to chop them into small bits.
Then, add the rest of the ingredients and blend until smooth. Refrigerate for a couple of hours, then serve. I like to top this pudding with goji berries and bee pollen to provide a contrast to the smooth, creamy texture.
