Our Pisco Sour cocktail is our signature drink at Ceviche Old St, Ceviche Soho & Andina. It’s Peru’s national cocktail, created in Lima in the early 1900s, it is the perfect aperitif and is a great pairing with our ceviches and hot dishes. All of our cocktails are made with Pisco, they’re a mix of London’s creativity and Lima’s flair. Pisco is the national drink of Peru and our Pisco Bar at Ceviche was the first in Europe dedicated solely to this light and luxurious spirit.
METHOD
Step 1: Grab some Pisco
Step 2: Fresh lime juice
Step 3: Sugar syrup – one part sugar and one part water
Step 4: And of course egg white…for texture.
Step 5: Chuck it all in a cocktail shaker and add ice.
Step 6: Shake, shake, shake!
Step 7: Strain into a glass and add Chuncho bitters.
Step 8: Drink and enjoy!
