On a visit to the Sacred Valley in Peru, chef and host of Hell’s Kitchen TV show, Gordon Ramsay, went to see a “Mad Potato Scientist” alongside Peruvian award-winning chef Virgilio Martínez.
“More than 500 years ago, this region was the heart of the Inca Empire. While many things have changed, the altitude of this region and the biodiversity of its ecosystem have remained the same, allowing farmers today to follow in the ways of the Incas”, National Geographic wrote.
Virgilio Martínez, known for his use of indigenous ingredients in his restaurants, told Ramsay that in this region of Peru food is very pure. Also, more than 4,000 potato varieties grow there, and this is where they spoke with “Mad Potato Scientist” Manuel Choqque who “works on cross-pollinating high-altitude potato strains once used by the Incas”, National Geographic said.
