On May 30, the National Potato Day was celebrated in Peru to divulge the nutritional value of this tuber.
According to Andina News Agency, the Andean tuber was domesticated thousands of years ago and has great benefits for the human organism, such as vitamin C, iron and zinc.
“It also has 189% more antioxidants, especially in its shell, and its consumption generates only 89 kilocalories, given that it has 35% of dry matter”, the news agency explained.
Andina also said that potatoes can be consumed by people of all ages because of its easy digestion. Its antioxidants also help prevent many degenerative diseases too.
In Peru there are 3,500 potato varieties with different properties, contents and qualities. Many farmers in the country have dedicated their work to preserve many of these different kinds of potatoes.
“The potato has contributed decisively to the Peruvian gastronomic ‘boom’ since with the potato a great diversity of regional stews of increasing acceptance and international recognition are elaborated”, Andina wrote.
