On August 15, the city of Arequipa celebrated 478 years of foundation and Perú 21 shared with their readers two stories of people who, according to them see the revalue the essence of this Peruvian department.
Hugo Cueto Vásquez is 65 years old and is considered the “master of unison” because he is capable of bringing to life the Loret organ of the Arequipa Cathedral, which was built in Belgium in the 19th century by Francois Bernard Loret.
“Cueto is the official organist of the basilica and expresses his art through this liturgical instrument that arrived in Arequipa on March 18, 1854”, the aforementioned media explained. He is currently the only one in the region able to pull out chords to perfection and captivate everyone with the sound of its 1,500 tubes and its 12 meters high.
The other story is that of Blanca Chávez, a chef and researcher of the Peruvian cuisine. According to her, there are many dishes that are not being served anymore in Arequipa, such as the pepián de cuy, the cau cau de hueveras, the lapas arrebozadas, or the sudado de machas.
“These are dishes that we must not lose because they are part of our history”, said Chávez, who also owns El Rocoto restaurant.
