Cuy Sausage Produced in Cajamarca

The cabanossi cuy sausage is just one of the products that Cajamarca cuy (or guinea pig) producers have put on the market.

During the Regional Cuy Festival of Cajamarca 2019, a network of cuy producers presented a variety of products they are testing out in the regional market. Cabanossi, which is a traditional Polish sausage made out of pork, is one of them.

The network of producers from the Condebamba Alto region includes 43 members. They were trained on how to make these cuy products by specialists from the National University of Cajamarca.

According to La República, the association bought special machinery to create the cuy sausage, along with ham, mortadella and smoked cuy. The producers also hope the products help fight anemia which in 2018 reached 37.2% of the population (source: Andina).

The cuy sausage is made by mixing the animal’s pulp with ingredients including salt and pepper, cumin, ají panca, and bay leaf. One kilogram of the sausage costs S/ 85.0, for which you need three guinea pigs. For now, they are selling the product in Cajamarca and in La Libertad, Trujillo.
